I especially love his bit (and I’m dating myself) about Mexican food. No matter what the food is, it’s always a tortilla, meat, and cheese. He’s not too far off! (It’s much funnier when he says it)

You betcha! With a few modifications, you can keto just about any Mexican recipe.
The biggest thing to remember with Mexican food is to skip the tortilla (or use a low carb one) and skip the chips and pass on the beans and rice too.
If you’re at a restaurant, remember that sometimes flour is added to queso as well. Be sure to ask!

Stick with grilled meats, vegetables, sour cream, and guacamole – with those basics you’ll be fine.
I’ve been known to make an enchilada casserole with no tortillas at all, and sour cream and cheese-based sauce. I cut low carb tortillas in 8 triangles and toast them so I get a little crunch. I’ll have to make it one day for y’all.

Most standard Mexican recipes can be turned into Keto Mexican recipes simply by deconstruction.
That’s as easy as swapping the flour tortillas for ones that fit your plan, making sure the rest of your ingredients are plan-friendly, and making your dish a casserole. Another plus – easy to make-ahead for a quick supper!
Guacamole is your best buddy when you’re cooking for Cinco de Mayo – and don’t forget the fajitas without tortillas (or go for some on-plan ones or use lettuce leaves as bowls). You’ll never miss them if you pile on the guac.
